You work at your own station with flour, eggs and a rolling pin — no machines for the first shape. A Roman cook walks you through fettuccine and filled ravioli, explains why the dough rests, and has you build one classic sauce from scratch. Then the aprons come off and everyone sits down to eat together with wine and dessert. You leave with the recipes and the ratios that actually matter.
